Classic dressing for fresh salads.


  • 1 tablespoon balsamic vinegar (or lemon juice or apple cider vinegar)
  • 3 to 4 tablespoons cold pressed extra virgin olive oil
  • 1 clove garlic, chopped (optional)
  • salt and pepper
  • 1 teaspoon honey or brown sugar
  • 1 tablespoon fresh herbs: chives, thyme, parsley, basil, oregano
  • For a French salad dressing, add 1 teaspoon Dijon mustard


  1. Place all ingredients in a jar with a tight-fitting lid.
  2. Shake to blend.

Refrigerate for up to a week
