Classic dressing for fresh salads.
- 1 tablespoon balsamic vinegar (or lemon juice or apple cider vinegar)
- 3 to 4 tablespoons cold pressed extra virgin olive oil
- 1 clove garlic, chopped (optional)
- salt and pepper
- 1 teaspoon honey or brown sugar
- 1 tablespoon fresh herbs: chives, thyme, parsley, basil, oregano
- For a French salad dressing, add 1 teaspoon Dijon mustard
- Place all ingredients in a jar with a tight-fitting lid.
- Shake to blend.
Refrigerate for up to a week
